OK, I FINALLY got through to Lowe's and they have the tileboard in a nice enough pattern for me. They also said they would cut it. I'm going to check it out.

Maybe I missed something but why can't you tile the entire area after the existing backboard is replaced?  You can get very thin tiles and it would be no different than tiling any other area.  The tiles that come preglued on a backing are super easy to cut and fit to size, then just grout.  No cutting tiles.  I'm getting ready to tile the wall behind the stove, about 6'x2' -+ and will lay it right over the existing sheetrock.

I'm not advising, only asking.
Can't plaster be put directly over the existing area, after maybe patching the holes with grid tape, and gradual plastering, ... and then putting up tiles?
There is also a type of faux tile-appearing paneling with a pretty durable finish that comes in 4 by 8 sheets. It is what this old house of ours came with and we did finally remove it and
replace with ceramic tiling.  There was a time when that looked good to me and was easy to clean. HD would cut it to your measurements for about $.50 a cut.

I called in the painter, and he does drywall, but he said that what he wanted to do is first replace the piece of drywall that is bashed in behind the sink (it's about 3'wide x 10" high). Then he wants to put in a finished piece of particle board finished with formica on top of that and put caulking all around the base so there are no leaks. I'm not so sure that this will work.

Yes, that is what the rest of the counter is made from. And the color of the board they sell at the bigbox store is exacty the same color (whitish) as the countertop they made 40 years ago! The thickness of the board is about 1 inch, but I was hoping to find a thinner board, however, that doesn't seem likely. I looked. The reason I wanted a thinner board was because I wanted to see if I could put up tile there. The sink leaves very little room behind it (about 1/4") once the board is in place. Is there any other type of material that could be placed behind the sink and covering the drywall about 8" high which (1) would take tile, and (2) is thinner than 3/4", and of course, which can be cut to size?
