For the sink, I would leave it as is and just get a longer water supply from the angle stop to the sink itself. Use the braided steel type - the plastic ones can tend to blow up like a balloon and leak. You can use the shark bites but be sure they push in all the way - it's easy to assume the pipes are in and they wouldn't be so, they would leak. They do have longer shark-bites connections that would serve your purpose.
As long as there are no problems, leave the plumbing alone, but if there are any problems, you might consider replumbing with PEX. With PEX you can use the shark-bites, also.

Cheater pipe. Take an old piece of steel pipe and slip it over the pipe wrench. More torque. Do the same for the piece it's connected to only in the opposite direction. This will hold the pipe steady as you remove the part you want to take off. Otherwise you might end up twisting and bending the whole thing. Could be a two-man job just to do that one removal.
