It does take several hours but wow is the taste out of this world. I remember the first time I smoked a turkey and
when I cut it open after 12 hours, the inside was pink and I thought it was raw. Fortunately, I had a friend over
for dinner that was very experienced in smoking meats and he said that it's common for meat to look pink when
it's been smoked. I had to taste it to believe it but yes, it was done and delicious.

That looks like it Aki. I guess it did take some time now that you mention it, but did everything we wanted and the meat was wonderful.
