Ideally left and right stud.
Patching the seam in the middle, without the support of a stud behind
makes it harder, it flexes and is much harder to get smooth out
the mud when closing things back up.
If needed, you can add a 1x4 behind the seam to provide support.

Then again, this is just a garage wall, doesn't have to be as nice
as inside the house...
