You will not have any problems with the fiberglass insulation if you use a plastic vapor barrier and install it as described in the first reply, tape any joints, and if desired tape over the staples.

Is there an exhaust fan in this bath room to exhaust the moist air? If not install one while you have the walls opened.

I'd think in a moist environment you would want something rigid that wouldn't be susceptible to matting down from the possible moisture.
