Good for you for jumping on the mouse problem as soon as you noticed it.
When the temps get cooler in the fall the mice move in. 

I wouldnt throw out any foods that were not opened. Good idea to wipe down the shelves with a bit of bleach and water. 

I seriously doubt you can mouse proof a garage with a dog door. Mice can squeeze through the tiniest places. Possibly even the garage door with the rubber bottom trim.

I have good luck with the mice poisons.. others like the sticky traps.  The new poisons have ingredients in them that keep the dead mouse from stinking.
I have never had a dog or cat eat the poisoned mouse but I have heard it is possible. 

Keep your traps filled with bait. I prefer the peanut butter.  All winter would be a good idea. Keep the traps close to the wall where the little boogers like to run.
