This will work for the gasses.  My concern is also the condition of the seals, gaskets, and flapper ball which will dry up and, in some cases, will crack.

I have a toilet that I never use and the mechanism started leaking so I shut it off.  Now the tank is completely dry.  But there's no need to flush a toilet to keep the water in the bowl from drying up and letting sewer gas in.  Just pour a cup or two of water gently into the bowl a few times a year.  Don't pour a lot or pour fast, because that might make it automatically flush and there's no water in the tank to fill it again.
