There have been a lot of good comments made.
What I can add is that the aggregate (gravel) makes
concrete stronger, and that mortar has sharper sand.
As already noted, it is not a good idea to pour concrete
around a wooden post, even if it is treated wood. A
great deal of what makes wood foundation systems
work so well is that they are designed to keep the
wood dry. Touching concrete keeps wood wet.
