Unless you REALLY need to, I wouldn't put sheetrock up if you're going to put paneling. And visa versa. And since they have rolled insulation that's easy to install, if i was you, I'd do that myself. Make sure you have a dust mask, goggles, gloves, and wear a long sleeve shirt to keep the stuff off of you. A staple gun would help securing it onto the studs if there's paper on it (make sure the paper is on the room side).

Subject: [DIY] Plank over sheetrock?
We just got the estimates for getting the walls insulated, sheetrock/taped, ready to paint……. Over $6000 then another $2000 for the planks to go over the sheetrock. Is it necessary to cover the fiberglass batts with sheetrock, if you're going to put a shiplap siding up? We have tongue and groove on several walls but don't think I want that on all the walls. I certainly wouldn't want to pay another $2000 to paint the sheetrock and put siding over it.
