[DIY] Question about humidity in garage apartment

I have a small rental apartment above my detached garage.  It has an air condition unit--standard electric and a heating unit. My tenant now informs me that the place is too humid.  She is deathly afraid of ants and she keeps the windows and doors always shut.  Never any fresh air in there.

She sent me a note saying "I noticed on one of the colder nights a week or so ago, I turned on the heat, and it was so damp in the apartment that the windows fogged up.  We cleaned all the windows and sills so I could get fresh air circulating in here, but I wasn't sure if there's anything else I should be doing.  I keep the ceiling fans going on a regular basis, and I always use the bathroom fan during and after I bathe."

I just went up there and she has the fan on the AC unit going but heat and cooling are off.  She finally opened a window and it really does not feel humid right now when I just went to check.   I am in central NC and the temps right now are great.  Most nights only getting to low to mid 40's and days are either 60 or 70 and not very humid at all.  Great fall weather.

I am just not sure what I can suggest she do to fix this issue.  My previous tenant never complained about this issue but most of us now have our windows open--at least during the daytime and sometimes even at night.

Any suggestions that I could tell her to try?
