Any sort of galvanized (zinc coating) "protects" iron nails because
the zinc corrodes (oxidizes) first, preventing the oxygen from bonding
with the iron (rust). Once all the zinc has oxidized, then the oxygen
reacts with the iron.

This is the reason boats have replaceable sacrificial anodes.
They get used up. You can't really replace the zinc on your deck nails.

Some other coatings (like Primeguard) depend on a complete
encapsulation of the iron to keep oxygen from reaching the iron.
Any breach, oxygen gets in, iron rusts (and tends to expand
when it rusts), opening a wider breach, more oxygen, more rust, etc.

Blueing (iron) and anodizing (aluminum) is a treatment to form a
surface skin of stable form oxidation that prevents further oxidation
deeper into the metal. Same basic problem as with other coatings.
