It depends on where the control mechanism is. If it is built into the fan motor with only a black and white wire ( and green ground) coming out of the motor, you cannot eliminate it. If you have a 3rd wire (possibly black w/ a colored stripe or blue), you can wire it directly with 2 switch legs from 2 switches. If it comes with a "pancake like" device meant to be mounted in the canopy, just do not use it.
