[DIY] Mortise Lock?

Comparing locks online, I believe what we have on our vintage double doors is a Mortise Lock.  The left side has a turn-knob inside and the outside takes a key.  Both doors have levers rather than knobs and vertical sliding bolts, one side goes up into the door frame, the other at the bottom.  As these are 6'wide and 8'tall I suspect they were originally from a restaurant or large home.  We can remove the decorative hardware from the doors, and there is a screw at top and bottom of the locking device.  However, online, the replacement parts seem to be very expensive, but I can't see how we can install a regular dead bolt without ruining the vintage plates on the doors.  Wondering if it's possible to have a key made rather than replacing the lock?  We currently have both sides taped closed so the lock won't engage.
