It's a tad harder to regulate gas thermostats under old
methodology. Old electrics have a +/- 6 degrees, so
126 yields 120 - 132. YOU make the adjustment in
your shower.
Depending on how cold "your garage" gets, you may
find in the AM, relatively cold hot water, or hot water
as it just cooled down an hr before and fired up... the
reheating of which takes 15 min - 45 if you had used
it all up. A "water heater blanket" can help. Insulate
the 1st 4-5 feet of your hot water line from the tank.
(I insulate it all, but the 1st 5 feet are much more critical.)
For SOME instances, you may want to run your water
(TANKful) heater at ~110 and use a small OnDemand
electric to make up the extra 10-20F.

I always put them on 120, and sometimes the water is almost scalding, other times barely warm, depending on whether it's fresh off a burn.Joy

Joy, If your comments are based on a shower head from a single-handle valve, you may need a shower valve rebuild, (valve has two pistons, that can stick and not move properly to compensate for temp changes);
or if comments based on sink faucet temp, water heater cold-water inlet may be bad dumping cold water into top of tank,
