You can use the self-adhesive tape, it's eliminates one layer of compound. Tape the joint and apply mud. DH prefers the old style but this is easier. Valleys or uneven joints will also determine how many layers you'll need and if you just want them covered or invisible. Sanding is messy, try to keep the need for it down by applying thin coats, feather it out with a wide blade and using a damp sponge. Wear a mask if you do any dry sanding. You might try a couple of techniques on scraps to see which you like best. Let it dry completely and paint so you will know what gives you the result you want. You really won't know how well you did taping till it's painted :) A textured paint can help disguise less than perfect taping.
