Can you post a closeup picture of what you have?  Wallpaper paste or the glue on strippable paper should come off fairly easily.  Hold a wet sponge against it for a few seconds then scrape it off with a large putty knife...it was actually easy, just took a little time.  I was on a ladder for the top half then sat on a stool to do the lower half.  Our biggest problem was the paper was applied directly to the sheetrock, no primer.  I did need pain med for a few days since my hands took the brunt of the repetitive action but ice packs helped and there wasn't anyone but dh and I to do it.    Maybe the scope of the project is overwhelming you, can you select just one wall and start in the morning when you're rested and see how it goes?  You're not out anything and if you find it's too much then you can look for pros or someone to pitch in.

Personally, I love wallpaper and you see it in all the high end magazines making a big comeback.  But we will only repaper the dining room and the rest is painted since it is easier to redo if necessary.
