My point of use hot water heater is installed in series with the hot water line so the only cold water it ever sees if that which laid in the line and cooled off since the last hot water usage. It is totally nonproductive to connect any secondary source of hot water to the cold water line. Your statement makes no logic as I am reading it. feeding hot or warm water to a point of use heater will not cause it to burn out since its sole design is to heat water. It is not uncommon to connect large hot water tanks in series to reduce losses and to also increase storage volumes. I wish you lived closer, I would drive over in a heart beat to try and assist you. I just do not want to see your dream turned into you most recent nightmare because you have been made dependent on others with business titles and limited understanding and/or skill levels.
You are correct, for some reason the hot and cold were reversed in both the kitchen and bathroom. The hot water for the DW comes from the hot water heater downstairs.
The instant hot is connected to the cold water, heats it's own little tank and just provides hot water to the dedicated outlet. It's not connected in any way to the others. We've had these for almost 40 years, along with dishwashers and never a problem, except when an installer accidentally hooked it to the hot water supply line and burnt it out.

What happens if you turn off the hot side (at the T connector) and turn on the dishwasher? Logically, you shouldn't get ANY water. If you do, then it's drawing water from somewhere else.
