I love the slatted bi-folds and you could paint an oriental print on them.  If you're thinking of attaching the fabric over the wooden door - or in the opening (?) you can do it the same way.  Apply a liquid starch, lay it out and squeegee it so it's uniformly damp then stretch it in the opening.  secure it with staples at one end then the other, then the sides, stretching it equally.  You could cover the staples with thin wood strips.  You can do it with dry fabric also but using starch or a fabric spray will give it some body.  The plexiglass would give a more traditional look, you could probably just use an adhesive in a few spots and attach the strips as you've mentioned.  I'd seen these done with plexiglass in one of the Lowes DIY magazines but when I looked for the link, I found this instead, looks easy enough and I assume you're not interested in light coming through?  http://www.instructables.com/id/Shoji-style-sliding-closet-doors-from-scratch/?ALLSTEPS

I love the look of shoji doors but not only are they expensive, traditional shoji doors are made with paper which wouldn't last a minute in my house. I decided to use my regular bifold closet doors and attach the wood lattice work and something in place of the paper to give the doors the general look of shoji doors but much sturdier and cost effective. The bifold doors are hollow so I'm afraid nailing anything to them wouldn't work.
