[DIY] On-going insulation question on 2-story shed.

Subject: Home Depot shed- now put up and being set up as hobby area.
In moving into a single wide mobile home and adding extra storage building to hold both of our workshops, my husband is taking the second floor and I am getting the ground floor.

We were hoping to be able to just use it with windows and doors open but the top floor is murderously hot in this southern heat so we are forced to add an air-conditioner to make upper floor workable.
I'm still hoping to be able to just open all windows and doors on the bottom floor and forego the AC addition.

We are insulating the inner walls and second floor roof and now am wondering if the first floor ceiling also should be insulated as the area below will be in natural weather while the upper floor is cooled.
The first floor rafters are 1' on center. I cannot find 12" insulation .
What value of insulation do I need as all u-tube tutorials say not to scrunch roll-insulation to fit.
If I bought the normal 2' wide insulation, what is the best way to cut it to fit?
