Food preparation has gone from being an art to a science and in my (not so humble opinion) this is not a good thing. I personally want to taste the true character of what I am eating. In other words, I want a little pucker power in my lemon and cherry pies and a touch of bitter in my chocolate treats. Most soft drinks are now more like syrup than what I remember them to be and perhaps that is why I seldom ever drink them, but of course I like my coffee black as well. We also always drink whole milk, even the dogs won't touch that 2% stuff. If eating whole foods is going to kill me, at least I will die happy. Oh and BYW there are no substitutes for lard in many recipes, especially pastries and pie crust, but just try to find the old fashioned rendered and pressed variety unless you happen to have a local packing plant, as we do.
