It needs to be primed. The open faucet allowed air to get into the line and the water level in the well pipe dropped. You'll need to find the make/model and then maybe the manufacturer or local dealer can tell you hwo to prime the system.
We have an irrigation well. When the distribution head cracked and air got in, we had to prime the pump pouring water into it. Method will vary by model and how it is installed. Maybe if there is a cut off valve closer to the pump, you may be able to keep the air out of the line when you open the sink valve for freeze protection. Or maybe priming the pump won't be too annoying and you did the same way next time.
