What I usually do for this situation is get a waterresistant 4x8 sheet - either laminant in the countertop area or plastic (PVC?) in the paneling area. Using Loctite on it makes it secure and siliconing the edges seals the ede and hides any mistakes you might make in cutting.

The drywall behind the sink is completely ruined. It has holes in it and needs to be fixed. There is no backsplash there. I called in the painter, and he does drywall, but he said that what he wanted to do is first replace the piece of drywall that is bashed in behind the sink (it's about 3'wide x 10" high). Then he wants to put in a finished piece of particle board finished with formica on top of that and put caulking all around the base so there are no leaks. I'm not so sure that this will work.
