I do not think the inside thermostat is the problem. There is only one set of control wires (signal) from the T.stat to the outside unit. Is the compressor (big motor) running when the t.stat is off inside? If yes, then do cut off the breaker to the outside unit when the t.stat is off. My older unit once had a sticking contactor where the entire outside unit stayed on all the time. Bad for sure.
I would use it sparingly and turn the outside power off when possible.
